-
1Sweat the aromatics
Butter over medium; shallot and garlic alone until translucent, no color.
-
2Wet phase
Add the mushrooms, salt, and pepper. They weep and steam.
-
3Drive it dry
Raise the heat and cook until bone dry: drag a spoon across the pan and the channel must stay clear, no liquid creeping back.
-
4Cognac
Off heat, add cognac; back on and cook dry again. Thyme in; taste.
-
5Cold-plate test
A spoonful on the freezer plate: if a water ring forms, back in the pan. No shortcuts.
-
6Chill the duxelles
Spread thin on a tray and freeze about 15 minutes until cold and spreadable.
-
7Hard sear
Screaming-hot pan; filet patted dry, oil on the meat, seasoned. Sear all sides ~60 seconds each for a deep crust only — the inside stays raw.
-
8Chill the filet
Fridge uncovered until fully cold; pat dry again.
-
9Blanch and press spinach
10–15 seconds in boiling water, straight to ice. Press the leaves dry twice — spinach is the hidden water source that ruins the bottom.
-
10Build in the ring
Plastic wrap lining a ring mold, overhang out. Spinach leaves for floor and walls. Cold filet in. Spoon duxelles on top and press level to about ½ inch. Fold leaf ends over, patch gaps, twist into a purse. Freezer 10–15 minutes, then remove the ring.
-
11Cut pastry discs
From the sheet: one bottom (~5 in) and one top (~8 in — drape-test over the bundle). Keep discs cold.
-
12Assemble
Bottom disc → egg wash the top face → bundle placed cap-up → drape the large disc from the crown, chasing air out downward → stamp through both layers → crimp hard → egg wash → score → vent.
-
13Hold
Fridge, uncovered, until bake time. This is the make-ahead window.
-
14Preheat
Oven 400–410°F with the flat sheet pan inside.
-
15Final chill + fresh wash
Pastry to the freezer 15 minutes, then a fresh coat of egg wash.
-
16Bake on the hot sheet
Parchment onto the hot sheet, middle rack. Probe around 12 minutes. Pull at 110–120°F internal — the thermometer ends the bake, never the color. About 18–25 minutes for a 3–4 oz filet.
-
17Rescue broil
If pale at temp: watched broiler, about 90 seconds, then out.
-
18Rest
Untouched 10–15 minutes. Then carve — burnished pastry outside, rosy medium-rare center, duxelles just set.
