Instructions

  1. 1Desalinate

Brisket soaks in cold water (change once, optionally). This is the difference between seasoned and salt-bomb.

  2. 2Build the braise

Vegetables on the bottom of the Dutch oven; brisket fat-side UP; spices scattered over the top and spread evenly; broth + water + vinegar (or lemon peel) to ~80% up the meat.

  3. 3Bring to temp

Stovetop to a gentle simmer only. Never a boil — boiling makes tight, dry meat.

  4. 4Oven braise

Lid on, 275°F, undisturbed (~3 hr — potatoes go in at the 2-hour mark).

  5. 5Potatoes, late

At the 2-hour mark, potatoes into the liquid; lid back on. Late addition keeps them structured, not mush.

  6. 6Check

A fork slides in easily. If slightly firm, another 20–30 min.

  7. 7Glaze and broil

Brisket out; rest 10 min. Stir Dijon + brown sugar; coat the top generously. Under the broiler 3–5 min until caramelized and crusted — watch it the whole time.

  8. 8Potatoes finish

Out of the liquid; tossed in butter, salt, pepper. Optional: light smash and crisp.

  9. 9Slice

Find the grain; slice AGAINST it, medium thickness — the against-grain cut decides tenderness.

  10. 10Plate

Fanned slices, buttered potatoes, a spoonful of braising liquid over the meat, parsley if using.
